Mango Avocado Salad
- 2 Tbsp lime juice
- 2 Tbsp oil on your GenoPalate shopping list
- 2 mangos, cubed
- 2 avocado, cubed
- ½ red onion, minced
- ¼ cup cilantro, chopped
- 4 cups spinach
- Salt and pepper to taste
- In a large bowl, combine lime juice and red onion.
- Whisk in oil, then toss with cilantro, avocado and mango.
- Add salt and pepper, serve over spinach leaves.
