Balsamic Roasted Beets
- 2 lbs beets
- ½ cup balsamic vinegar
- ½ cup ___ oil
- 1 tsp champagne mustard
- 1 tsp sesame seeds
- Salt and pepper to taste
- Preheat the oven to 400 degrees.
- Prepare beets by washing and removing top and bottom ends and wrap individually in foil. Roast in the oven for 50 minutes or until tender. Remove from the oven and let cool for 10 minutes.
- Once cool enough to handle, peel the beets and cut into ½ inch pieces.
- Combine remaining ingredients in a large bowl and whisk. Toss beets into dressing and serve. Top with sesame seeds.
