Sautéed okra

INGREDIENTS

  • ¼ cup olive oil
  • 1 tsp cumin seeds
  • 1 tsp red chili flakes
  • 12 oz okra, trimmed and cut into ½ inch pieces
  • 2 Tbsp coconut flakes
  • Juice of 1 lime
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp ground turmeric

INSTRUCTIONS

  1. In a large skillet over medium-high heat, add oil, cumin seeds, and cook for about 30 seconds.
  2. Add garlic and chili flakes. Cook for an additional 30 seconds.
  3. Add okra and cook until tender, about 5-8 minutes.
  4. Add coconut and turmeric, heat through.
  5. Stir in lime juice and serve immediately.
