Herbed amaranth

INGREDIENTS

  • ½ cup amaranth
  • 1 ½ cups water or broth
  • ¼ tsp salt
  • 2 Tbsp fresh parsley, chopped
  • ¼ cup fresh mint, chopped
  • 3 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • Black pepper

INSTRUCTIONS

  1. To cook amaranth, bring broth and amaranth to a boil in a medium pot.
  2. Reduce the heat to a simmer, cover, and cook for 20 minutes.
  3. While amaranth is cooking, combine oil, herbs, and lemon juice.
  4. Remove from heat. Add dressing to amaranth and toss to coat. Season to taste with additional salt and pepper.
