Roasted halibut with lemon

Servings: 2, Cook time: 20 min

INGREDIENTS

  • 2 (8 oz) halibut fillets
  • 2 tsp canola oil
  • Salt and pepper
  • 2 sprigs rosemary
  • 1 lemon, thinly sliced

INSTRUCTIONS

  1. Preheat oven to 450 degrees.
  2. Place fish in a baking dish and brush with 1 tsp oil and season with salt and pepper.
  3. Top each fillet with a rosemary sprig and a slice of lemon.
  4. Drizzle remaining oil over lemon slices.
  5. Bake for 10 minutes until just opaque.
  6. Add oil to a large skillet over medium-high heat.
  7. Cook patties until golden brown on each side, about 6 minutes.
