Lentil burger

INGREDIENTS

  • 1 large egg
  • 2 cups cooked lentils
  • ½ cup shredded carrot
  • 1 clove garlic
  • ¼ cup sunflower seeds
  • ½ cup breadcrumbs
  • ¼ cup fresh cilantro, chopped
  • 2 Tbsp fresh parsley, chopped
  • ½ tsp cumin
  • ½ tsp salt
  • Pinch of cayenne
  • ½ cup onion, chopped
  • 2 Tbsp avocado oil, for cooking

INSTRUCTIONS

  1. Combine all ingredients except for the egg and oil in a food processor.
  2. Pulse until combined and then transfer to a large bowl.
  3. Add egg and mix to distribute evenly.
  4. Form mixture into 6 equal-sized patties.
  5. Add oil to a large skillet over medium-high heat.
  6. Cook patties until golden brown on each side, about 6 minutes.
