Chia seed pudding with fruit

Servings: 2, Cook time: 20 min

INGREDIENTS

  • 6 Tbsp chia seeds
  • 2 cups unsweetened almond milk
  • ½ tsp vanilla extract
  • Sliced banana and/or berries for topping

 

INSTRUCTIONS

  1. In mason jars, mix together chia seeds, milk, and vanilla.
  2. Put a lid on and shake. Pour half of the mixture into a separate mason jar to create 2 servings (one in each jar).
  3. Let it sit for 5 minutes, then shake again. Cover and put the mixture in the fridge for a minimum of 1-2 hours or overnight for best results. The mixture should not be liquid-y.
