Bean & veggie wrap

INGREDIENTS

Bean Dip

  • 15 oz can of garbanzo beans
  • 1 tsp cumin
  • Juice from 1 lime
  • ¼ cup red onion, minced
  • ¼ cup cilantro, chopped
  • ¼ tsp salt
  • 1 jalapeño, minced (optional)

Wrap

  • 10” tortilla of choice
  • ¼ cup bean dip
  • ¼ cup collard greens
  • ¼ sliced bell pepper
  • Sprigs of cilantro (optional)

INSTRUCTIONS

Bean Dip

  1. Combine all ingredients in a food processor and blend until smooth.

Wrap

  1. Take a tortilla and spread bean dip down the center.
  2. Add collard greens, bell pepper, and cilantro.
  3. Fold in ends, then fold in the bottom of the tortilla and roll to the top to make a wrap.
