Mango and Avocado Salad

 
Mango Avocado Salad

Serves: 2-3

Ingredients

  • 2 Tbsp lime juice

  • 2 Tbsp oil on your GenoPalate shopping list

  • 2 mangos, cubed

  • 2 avocado, cubed

  • ½ red onion, minced

  • ¼ cup cilantro, chopped

  • 4 cups spinach

  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine lime juice and red onion.

  2. Whisk in oil, then toss with cilantro, avocado and mango.

  3. Add salt and pepper, serve over spinach leaves.
