Mango and Avocado Salad
2 Tbsp lime juice
2 Tbsp oil on your GenoPalate shopping list
2 mangos, cubed
2 avocado, cubed
½ red onion, minced
¼ cup cilantro, chopped
4 cups spinach
Salt and pepper to taste
In a large bowl, combine lime juice and red onion.
Whisk in oil, then toss with cilantro, avocado and mango.
Add salt and pepper, serve over spinach leaves.
